Mexican Pork the Slow Cooker way

So...I decided to take Meredith's lead and try her roast recipe she posted http://budgetpaleo.blogspot.com/2011/04/food-on-gono-excuses.html. Only thing was I didn't have exactly the same ingredients, but decided to give it a shot anyway and let me tell you it is delicious!  Spicy but delicious!  Here is what I used:

1-3.5 pound pork loin roast, boneless
1 small can Herdez taqueria sauce
1 small can El Pato Jalepeno Salsa


Place the pork roast in the bottom of your crock pot and pour the two cans over your roast, turn to low and cook over night.  I used my really old crockpot, like really old (like 20 years old!)...it cooks really low unlike my newer one that is black and stainless.  On the newer one low really isn't low, it cooks really hot and fast and makes every thing really dry.  But this old one was perfect, this morning I shredded the roast, mixed it up real good and let it cook for about another hour.  Yumminess!  I love it, it has the perfect flavor and is great straight out of the pot!  Or in a lettuce wrap topped with my guacamole and pico de gallo.  So easy and so tasty!  Thank you Meredith for the inspiration!  Happy Cinco de Mayo!
