Sausage Griddle Sandwiches

One of our favorite uses for leftover Fluffy Grain Free Pancakes (almond flour is our preference) is to make Sausage Griddle Sandwiches. They are really easy and so tasty! I make up a batch of Homemade Breakfast Sausage (Turkey or Pork), make it into small patties and fry them in bacon grease the night before.  Then the next morning, I beat one egg at a time and pour it into a greased ramekin, and then microwave for about 30-40 seconds.  Then I layer starting with a pancake then sausage, egg (I usually slice it in half so it's thinner) and then another pancake.  Or sometimes we add in a couple of strips of bacon.  These are quick (with some advanced planning), easy and tasty.  It's a breakfast that my 4 younger ones request.

1 batch of precooked Breakfast sausage
eggs
Bacon (optional)

Spinach and Sausage Frittata

The other day I was trying to think up a new take on breakfast, eating fried or scrambled eggs everyday was getting old.  This is what I came up with a new version of Fritata, as always feel free to use this as a jumping off point and make modifications to make it your own.


SPINACH AND SAUSAGE FRITTATA

1 cup bacon ends, chopped
2 cups of raw uncooked homemade turkey sausage (recipe is found here)
4 cups chopped spinach
1/4 cups chopped fresh chives
1/4-1/2 tsp dried cilantro
1/4 tsp ground black pepper
1/8 tsp ground white pepper
10 eggs
1/4 cup coconut milk (full fat)
Chopped tomato

Fry your bacon ends until nice and crispy.  Remove from the pan and set aside, reserving the fat in the pan, add the ground turkey and cook until done.  Then add your chopped spinach and chives and cook until the spinach is well wilted.  Crack your eggs into a large bowl, add the milk and spices and beat with a wire whip until blended well.  Add the bacon to the meat mixture and pour the egg mixture over it.  Sprinkle with chopped tomato.  Cook over low-med heat for a couple of minutes and then place in the oven and and broil for a couple more minutes until done (watch closely).


 Turkey Sausage and veggies ready to go.

 Ready to go in the oven.



 All done and ready to be served.

 Mmmmm....yummy!

  Baked Breakfast Casserole
(New Version of Mini Quiche)
Makes a 9X13 inch pan
15 Omega 3 eggs beaten well
1/2 of a very large parsnip, or  about 2 cups, shredded
1-2 shredded carrots about 1 cup
3-4cups of organic baby spinach roughly chopped
1 bunch of green onions chopped
4 mini peppers chopped
1/2 cup coconut milk
4 chicken Apple Sausages cut in to 4ths and sliced
Salt and Pepper to taste
Preheat your oven to 350 degrees.  In your choice of fat, cook the sausages, spinach, and onions till tender or until sausage is browned.  While that is happening crack open your eggs and beat them well add the coconut milk and mix well.  Stir the rest of the vegetables into the sausage and spinach combo, and cook for a minute or two.  Then add it to the eggs mixing well.  Grease your 9 X 13" pan really well with coconut oil, and pour in the egg mixture.  Bake for about 30 minutes or so, depending on your oven.  Check the middle by inserting a knife to see if it comes out clean to tell if it is done or not.  This is a sweeter version of Quiche and much different than the mini quiche in as far as taste.  Baking it in a pan and cutting it into squares really saved time, for me last night.

Breakfast Sausage

These are the BEST!!!
I made up a batch to use in a Pumpkin Soup I made the other day, you use the sausage in the soup, the smell just from all the spices was wonderful.
It is so easy to make I've decided to bag up all the spices so all I will need is the egg and ground turkey....hey why not make the easy, easier.
FYI...I'm not that "into" cooking, so easy is my Friend. lol



Turkey or Pork Breakfast Sausage


ingredients:
1 lb ground turkey or pork
1 tsp onion powder 
1/4 tsp each cumin, black pepper, nutmeg, oregano, red pepper flakes, and ground ginger
1/2 tsp each dried basil, thyme, and sage)
1/2 tsp sea salt
1 egg, lightly beaten (if you are using ground Turkey omit the egg for a more moist sausage)


Mix all ingredients together and chill for at least an hour to let the flavors meld. Form it into patties and saute until nicely browned on both sides. If you use turkey you might need to grease the pan a little, but if you use pork it should produce enough of its own fat.
